Description
For anyone after a fresh, vegetal profile and more push than jalapeno gives. This Mexican staple is fermented from fresh green serrano, salt and acetic acid, which deepens the flavour it already has. The name comes from the Spanish word for mountain range. The chilies are picked green, before full ripeness, which is what gives the crush its grassy, fresh and faintly tart character.
At around 25,000 SHU green serrano gives a clear, rising warmth: first the fresh green of the chili, then a pleasantly spiced finish. It is an ideal base for green salsas, guacamole and real Mexican tacos, burritos and nachos. It works just as well in dips, sauces, burgers, salads, soups and stews.
